Quinoa Veggie Beet Impossible Burger

This is a very fulfilling, healthy burger with great texture and flavor! Enjoy it on a bun or over fresh greens.

Ingredients
  

  • 1 cup Quinoa Cooked prior to adding to burger.
  • 12 oz. pkg. Impossible Burger meat Or "Beyond Beef" brand.
  • Beet powder Optional.
  • 1/2 cup Onion Chopped.
  • 1/2 cup Sweet pepper Red or green, chopped.
  • 1/2 cup Carrots Shredded; save some time and buy pre-shredded.
  • Tomatoes, regular or cherry Sliced.
  • Lettuce I like Romaine as it is a flat lettuce, but your choice.
  • Condiments of your choice Ketchup, mustard, pickles, etc.
  • Seasonings As desired.

Instructions
 

  • Cook quinoa as directed on package.
  • Chop onions and peppers. Shred carrots if not using pre-shredded.
  • Place ground Impossible Burger meat in a bowl. Add the chopped veggies, beet powder if using, and quinoa to the meat.
  • Mix well and add seasoning as desired.
  • Form medium-sized patties.
  • Grill or pan-fry each patty approximately 5-6 minutes per side on medium heat.
  • Assemble your burger with the fixings of your choice. Add roasted corn, slaw, and fresh fruit as sides for a delicious summer meal.

Notes

Melissa's Modifications: This is the best burger creation I have ever made! The texture and flavor is great. You may even forget you are not eating meat! Beyond Meat will work just as well as Impossible Burgers. Use the ground package, not the crumbles, as crumbles do not stay together as well in a burger. Forgo the bun to save some calories and carbs and enjoy the quinoa veggie beet burger with all the fixings in a lettuce wrap instead. Fold your patty into a leaf of romaine or iceberg lettuce.
