My Yogurt Parfait with Berries and Dark Chocolate Drizzle is an easy and delicious dessert that is light (with no added sugar) and a perfect end to any meal, or even as a healthy snack. It definitely satisfies any sweet tooth!

Yogurt Parfait with Berries & Dark Chocolate Drizzle

This light dessert or snack is filled with antioxidants, little or no added sugar, and is very satisfying!

Ingredients
  

  • 12 oz Yogurt (2 oz per individual cup) plain, vanilla, or non-dairy
  • 2 cups Mixed fresh berries of your choice blueberries, blackberries, and/or raspberries
  • 1 tsp Vanilla optional, if using plain unsweetened yogurt
  • Several drops Stevia Clear or 1-2 tsp. of monk fruit to sweeten the plain yogurt optional, not necessary
  • 2 oz Melted dark chocolate chips I prefer Ghirardelli Brand 60% cacao. Or dairy free dark chips — Enjoy Life, Nestles now has a plant-based chip, or HU — are several bands I have used.

Instructions
 

  • Wash and dry berries of your choice. Hull and cut strawberries into pieces, keeping a few fresh uncut strawberries for garnish.
  • If you are using plain yogurt, place it in a bowl and add pure vanilla. If you wish to sweeten, add 1-2 drops of sugar substitute of your choice or 1-2 tsp of monk fruit to get the right flavor.
  • Use 8 oz parfait glass or plastic 8 oz wine glass to assemble the ingredients.
  • Spoon the yogurt mixture into the bottom of each of the parfait glasses, then add a layer of berries, then more yogurt, berries … repeat until you reach the top.
  • Slice the whole strawberry, hull to bottom point, so you can hook it onto the top of the glass for presentation.
  • Melt the dark chocolate either using a double boiler or microwave oven.
    1) Using a double boiler pan, fill the pan with water, turn stovetop burner on medium- high heat, and let boil. Place chips in the top portion, place on top of pan, and stir until melted.
    2) If you use a microwave, place chocolate chips in a microwave safe dish, heat for 1-2 minutes, and stir every 30 seconds until fully melted.
  • Drizzle the dark chocolate over the top of the fruit and yogurt parfait and serve.

Notes

MELISSA’S MODIFICATIONS
This is an easy dessert and very fun to eat. If you make it ahead of time, you can refrigerate until ready for dessert, then prepare the dark chocolate and drizzle while hot – very delicious.
For a crunch, add healthy granola with no added sugars or one that is lightly sweetened with honey, maple syrup, or monk fruit to one of the layers in your parfait (be sure to read the label for added vs natural sugars).
