natural salad

An old (40+ years!) and delicious recipe. Its easy and can be a one meal alternative on hot summer days. I’ve made The Natural Salad for years … picnics, dinners and it is ALWAYS a crowd pleaser … Stuff The Natural Salad in pita bread or hot popovers (popovers stem from my New England roots living in Boston for school, Go BU!). Enjoy and let me know how you like it!

The Natural Salad

Prep Time 20 minutes
Total Time 35 minutes
Course Lunch, Main Dish, Side Dish
Servings 4 people

Ingredients

  • 1 cup Carrots, grated
  • 1 cup shredded wheat cereal, crunched up substitute whole wheat breadcrumbs if you prefer
  • 1 cup Sharp Cheddar Cheese, shredded Non-dairy shredded cheddar also works great.
  • 1 cup Raw Sunflower Seeds
  • 1/2 cup Onions, chopped
  • 1 cup Celery, diced
  • 1 cup Parsley, chopped

The Natural Salad Dressing

  • 1/2 cup Saflower Oil
  • 1 tbsp Tamari
  • 1 tbsp Honey If you do not eat honey, replace with Agave sweetner
  • 2 tsp Basil
  • 2 tbsp Lemon juice
  • 1 tsp Sage optional
  • 1/2 tsp kelp optional

Instructions

  • Toss all the ingredients in a bowl. This recipe can be doubled or tripled for a big crowd and adjust ingredients to taste, it makes a full salad. Pour and toss dressing over the salad when you are ready to serve. I think it is delicious the next day as the ingredients absorb the dressing adding to the flavor. So Yummy, just ask my kids!
