Watermelon, Berry and Feta Salad

A delicious refreshing summer salad…little different but will not disappoint!

Ingredients
  

  • 3 cups Watermelon Cut in small cubes or balled
  • 2 cups Blueberries
  • 1.5 cups Cucumbers Remove seeds
  • 1 cup Feta cheese Cut in small cubes or crumbled, non dairy vegan cheese also works well.
  • 2 tbsp Mint leaves Thinly sliced
  • 3 tbsp Olive oil May omit
  • 1 tbsp Lime juice Or lemon juice
  • Salt & pepper To taste

Instructions
 

  • Prepare watermelon, berries and cucumbers
  • Add together in a large bowl along with the mint
  • Prepare the dressing in a small bowl – whisk together the olive oil, lime (or lemon) juice, salt, and pepper
  • Drizzle the mixture over the watermelon mixture, toss gently to coat
  • Sprinkle with feta and serve

Notes

Melissa’s Modifications:
This is a light and flavorful salad. If you are dairy intolerant (or Vegan), use non-dairy feta cheese. My dairy-free cheese of choice is VioLife which has great feta flavor and holds up well in the salad. You can omit the oil if you wish, just use the mint and citrus of your choice for the dressing. A little splash of fresh OJ works as well for that added touch of citrus!
The dish can be made with other berries such as raspberries or blackberries, depending on your tastes!
